Potato hash with apple, bacon and thyme

Serves 4

  • 750 g baking potatoes
  • 3 slightly sour apples
  • 200 g sliced bacon
  • Olive oil
  • Salt & pepper
  • 2 tablespoons fresh thyme leaves

Preparation

Peel the potatoes and cut into chunks. Cut the apples into pieces. Boil the potatoes until cooked, approx. 20 minutes. Add the apple in the last five minutes.

Gently fry the bacon. Roughly mash the potato and apple, season with oil, salt and pepper. Crumble the fried bacon, stir three-quarters of the bacon and half of the thyme through the mash. Sprinkle with the remainder of the thyme and the crispy bacon.
